Operation Title: Development of Product and Technological Innovation in the Production Process of High-Quality Fruit Wine from Haskap Berries Using Electrodialysis.
Haskap Berry
The main goal of the project is to develop and implement an innovative deacidification process for haskap berry wine using the properties of electrodialysis.
The main goal will be achieved through the following specific objectives:
- Evaluating the effectiveness of electrodialysis technology in the separation and concentration of acids in haskap berry wine.
- Determining the optimal electrodialysis duration for effective deacidification.
Developing a prototype electrodialyzer dedicated to high-quality fruit wine deacidification. - Reducing the acidity of wine from the current 14.5 g/L to a target range of 10-12 g/L.
- Investigating the properties of the dilute phase (the liquid separated from the wine after deacidification), which may have broad applications in the food industry.
As part of the project, research and development activities will be carried out to achieve measurable products and implementations.
As part of the operation, research and development activities will be conducted to achieve measurable outcomes, such as product improvements and implementations.
- Enhanced product in the form of haskap berry wine with improved taste properties. Currently, the total acidity of haskap berry wine is 14.5 g/L, and through the implementation of this project, the improved product will achieve an acidity level of approximately 10-12 g/L. For comparison, the acidity of grape wine is around 7 g/L. This goal will be achieved by developing an innovative production process while ensuring the stability of the wine in terms of physicochemical, sensory, and microbiological parameters. The outcome of these efforts will include the enhanced wine product as well as publications in journals listed by the Polish Ministry of Education and Science (MEiN).
- Utilization of the by-product generated during the electrodialysis process, known as the dilute phase (the liquid separated from the wine after deacidification).
- The project will also result in a new technology for producing haskap berry wine using electrodialysis. This technological solution is not yet widely known on a global scale and will represent a groundbreaking innovation with worldwide significance.
